Nutritional Value
Greener harvest of this robust olive oil keeps it better than delicate ripe ones because of the higher content of polyphenols, the natural antioxidants (here we have more than 380 PPM from the expected range of 50-500 PPM). You can recognize the presence of these polyphenols because they contribute pepperiness and bitterness to the flavor of the olive oil.
The high nutritional value is due to its chemical composition and the essential fatty acids it contains.

The small fruited Koroneiki variety. One side slightly curved and features a small nipple, fleshy olives, with high oil content.
The unique geography and microclimate of Mani where our family olive trees are living healthy for centuries.
The knowledge of the secrets of good (organic) farming, the experience, dedication, hard work and a little luck and cooperation of Mother Nature.
The early harvest when the olives are only bright green and unripe transformed into pure liquid health in the same day, by mechanical cold extraction where temperature during the crushing process does not exceed 25 °C which keeps its unique phenolic composition.
The perfect storage conditions and the natural “filtering” (sedimentation) - using stainless steel tanks where all the polyphenols are preserved and the oxidation avoided.
With respect to the environment and our customers we always use high quality opaque very dark glass bottles as not to absorb the UV light, preserve the aroma, the flavor and maintain all the nutritional values at their initial levels.
