The rich flavor and the deep fruity aroma of Kalamon variety olives can be detected in the fine texture of olive paste O! live, along with elegant notes of our organic extra virgin olive oil, wild oregano from the slopes of Taygetos mount, garlic and natural sea salt from Mani, thanks mainly to the stringent selection of the raw material and the slow process of grinding and mixing it. The Kalamon olives paste is native to the Mediterranean region as one of it classic comfort foods. Bold and slightly garlicky this spread is wonderful on a crusty bread together with chunks of ripe tomato and buttery feta cheese generously seasoned with our EVOO which we serve as a Bruschetta Mani – one of the tastiest and beloved appetizer in our menu, simple yet delicious way to introduce our clients your to the region of Mani. We found that the flavors of the Kalamon olives paste rounded out the flavors of the wine and pulled out it beautiful, fruit notes. Foods high in salt, such as this tapenade, really appreciate wine that is high in acidity such a crisp, refreshing Sauvignon Blanc with notes of citrus and grassy herbs or Asyrtiko from Crete or Santorini islands characterized by its Mineral-salty richness and sharp acidity. Our organic table olives Kalamon are 100% handpicked, Produced according to the international standards and regulations for organic farming. They are collected by hand when perfectly ripened, washed and brined patiently. Meticulously we observe the whole process and in no phase are chemical ingredients used.
When the natural fermentation is over and the olives receive their final ripeness, their genuine taste, aroma and organoleptic characteristics, they are pitted, ground precisely and mixed with the other natural ingredients finally to offer one more product of excellent quality with a label O! live.
