As far back as 6050 BC, salt has been an important and integral part of the world’s history, as it has been interwoven into countless civilizations.

Salt has been so valuable through the ages as a high value commodity that it has been referred to as ‘white gold’ and used as a method of trade and currency.

Salt was a flux in glassmaking, for glazing in ceramics, in leather preparation, dyeing and bleaching cloth, it was one of the most effective and most widely used of all food preservatives.

Today, harvesting is fully mechanized, except for a few areas such as Kythira and Mani, where a few small producers collect the crystal treasure of the sea rocks almost the same way the Greeks did it 2,000 years ago. Hand harvested Fleur de sel of limited production, from the sea rocks of Hotasia, East Mani – an unpolluted area environmentally protected by Natura 2000. It is coarse in its texture and comes in large, thick flakes, which are rich in taste and sea aroma.

What makes this MANI product so special is that it also contains unique intangible ingredients: mindfulness in dealing with people and nature, love for our work and a pinch of Greek sensuality.

Initially we wanted a salt as clean and pure as possible for our restaurant, surely to be from our region as were heard already that Mani’s sea salt is all natural (99.7% purity), unrefined and unprocessed, thus retaining all of its natural nutrients (magnesium, potassium, minerals) and now we offer you these sparking crystals as one of the products with label O! live.

Leave its crystals dissolve in your mouth and you will appreciate its fine yet aromatic taste. Sprinkle it on every salad, grilled vegetables or a prime beef cut to give a delicate finishing. Add a sophisticated touch to your deserts just like we do.

The fact is that throughout history, salt—called sodium chloride by chemists—has been such an important element of life that it has been the subject of many stories, fables, folktales and fairy tales.

Most people probably think of salt as simply that white granular seasoning found in saltshakers on virtually every dining table. It is that, surely, but it is far more. It is an essential element in the diet of not only humans but of animals, and even of many plants.

“O! my Salt” of O! live is diamond crystal marine salt of supreme quality Afrina Mani’s – FLEUR DE SEL obtained solely by traditional harvesting methods. It is 100% natural which is not altered in any way, delivering all of the beneficial nutrients of unrefined sea salt. Fresh, bright, white salt that always remains slightly moist. Just a few flakes are enough to give a unique taste effect to fresh food, salads, meat, fish, cooking and confectionery.

What is the role of natural salt in fermentation? Salt is important for inhibiting bad bacteria.

What are the health benefits of fermented food? Pre-digestion is a large benefit. This means that the food has been broken down already, which makes it easier for humans to digest. For instance, we know some people can’t tolerate lactose (commonly found in dairy and milk), but through the fermentation process, lactose is transformed so it is easier to digest – in the form of kefir or yoghurt. Fermentation also creates new nutrients like vitamin B, folic acid, riboflavin, niacin, thiamine and biotin.

Crystalline structure, light mild taste, rich in nutritional trace elements, about 84, including magnesium, iodine, calcium, potassium, iron, zinc, copper, fluoride.

The difficult access to the small natural pits in the rocks, of East Mani, which time, the sun and the sea have beneficially created, generously gave us this unique natural product.

Harvested only manually with traditional wooden tools, in small quantities and only the crust at a time, with a frequent and continuous repetitive process from May till end of June, sundried than packed.

With respect to the environment and our customers, we use high quality glass jars, reusable, eco-friendly and 100% recyclable. Packed and labeled by our company. Sealed with a protection side, temper evident stripe so as to maintain the excellent quality of Fleur De Sel of O! live. It retains moisture content due to not treatment.
